A true taste of Sanibel Island!
Instructions
In a medium saucepan over low heat, melt 3 T. of butter. Add the chopped garlic and cook, stirring for 3 minutes.
Add remaining 3 T. of butter, when melted stir in the juice of limes and 1/2 t. of lime zest, sambal (or chili peppers), salt and pepper and cook on low heat for another minute. Remove from heat and allow sauce to rest.
In a large pot add sea salt and 6 cups of water and juice of one lemon, bring to a boil and then add the shrimp. Cook until the shrimp are pink and firm - do not over cook - will only take about 2 minutes. Drain in a colander to remove all excess water.
In a large bowl toss the shrimp and butter-chili sauce. Add the chopped cilantro and gently stir to incorporate. If using the jalapeno add that now as well. Serve with large pieces of grilled crusty French Bread.
