Ingredients
- 1 lb. bacon cut into small pieces
- 4-6 large potatoes russet or bakers, peeled and cut into 3/4" to 1" cubes
- 1 medium onion chopped
- 4 stalks celery chopped
- 3 cloves garlic chopped
- 4 cups chicken broth
- 3 cups water
- 3 cups half & half can use whole milk if you like
- 2 T. butter
- 2 3/4 cups all-purpose flour divided
- 6 large eggs
- 1 T. milk
- 3 T. fresh parsley chopped
- 2 scallions diced - optional
- 1 cup cheddar cheese shredded - optional

Instructions
Soup Base
- Fry bacon in a large non-stick skillet over medium high heat, 5-7 minutes, once crisp drain on paper plates. Reserve 2 T. of bacon grease.
- Add butter, reserved bacon grease to a large soup pot.
- Add onions, celery and garlic, cook for 3-5 minutes. Add potatoes and stir to combine.
- Add 1/4 cup of flour to pot and cook for 1 minute. Add stock and water. Stir to incorporate. Cook until potatoes are almost fork tender.
Dumplings
- Beat the eggs and milk in a large bowl until well beaten.
- Add 2 1/2 cups of flour and stir to combine. Batter should resemble very thick pancake batter, I always make the batter very thick, my family likes tougher dumplings.
- Pour batter onto a rimless saucer.
- Turn soup to high heat - start cutting dumplings into soup by tilting the saucer and cutting with a hot sharp knife. Dip knife in soup every few cuts to keep hot. Makes for cutting the dumplings must easier.
- Continue to cut dumplings into soup until the batter is used up.
- Add bacon and chopped parsley to soup and turn heat to medium. if soup isn't thick enough, add up to 4 T. of instant potatoes or use cornstarch slurry to thicken if needed.
- Season with salt and pepper to taste. Serve hot topped with scallions and cheddar cheese (optional).

Where does the 3 cups of half and half (or whole milk) get used? is it a substitute for the water? I used it in the dumplings and had a huge mess. used the 1T milk in the dumplings and came out perfect. But nothing about the 3 cups half and half
