Ingredients
Chicken Broth Base
- 2 T. olive oil
- 2 T. unsalted butter
- 1 lb. boneless skinless chicken breasts cut into 1" pieces
- 1/2 med. white onion diced
- 1 large carrot diced
- 3 stalks celery diced
- 1 t. sea salt
- 1/2 t. freshly ground black pepper
- 8 cups chicken broth homemade if you have it
Dumpling Batter
- 2 1/2 cups all-purpose flour
- 1 cup buttermilk I make my own by adding 1/2 T. of white vinegar to a cup of milk
- 3 T. shortening
- 1 T. unsalted butter
- 1 t. baking powder

Chicken Broth Base
- Heat olive oil and butter over medium heat in a 8 quart pot.
- Add chicken and stir until slightly browned,
- Add vegetables and season with salt and pepper. Cook for 5-7 minutes.
- Add the chicken stock and turn heat up to high, to start to boil.
Dumpling Batter
- In a food processor with the steel blade add the shortening and butter.
- Sift together the flour, baking powder and 1/2 t. of salt.
- Add dry ingredients to the food processor and pulse until combined, should look like small peas.
- With the processor on, slowly pour the buttermilk into the flour/shortening mixture until it forms a ball and pulls away from the food processor.
- Flour your board with AP flour and turn the dough out onto it, carefully removing the blade.
- Sprinkle about 4-5 tablespoons of flour on top of the dough, knead gently (do not overwork the dough) and pull the dough into a large disk.
- With a floured rolling pin, roll the dough out until it is about 1/8" to 1/4" thick - this depends on how thick you want your dumplings - they will puff as they cook.
- Using a pizza cutter - cut the dough into squares, about 1" - 2" in size.
- Add the dumplings to the boiling broth, do not over crowd the pot. Add dumplings in batches, including the excess flour from rolling them out.
- Once all the dumplings have been added stir gently and turn heat down to low and allow entire pot to simmer slowly, Everything will appear soup like, so be patient and allow the chicken and dumplings to thicken up. At least and hour or more.
- Before serving check for seasonings and add salt and pepper as needed. I sometimes add a tablespoon of parsley just before serving.
