Ma’s Meatloaf

- 1.5 lbs. ground beef 80-20 is best but ground turkey can be used too, just add some olive oil for fat.
- 1/2 cup couscous I replaced my mom's usual instant oats with couscous
- 2 eggs
- 1/2 cup ketchup
- 1/2 medium white or yellow onion sautee in 1 T. olive oil until transluecent
- 1/2 green bell pepper sautee along with onion - allow both to cool
- 1 t. garlic powder
- 1 T. fresh chopped parsley or 1/2 T. of dried
- 1 t. sea salt or to taste
- 1 t. ground black pepper
- 3 T. milk
- 3/4 cup ketchup
- 3 T. brown sugar
- 1/4 t. ground black pepper

- Preheat oven to 350°F, place a pan of water on the bottom shelf directly under the pan where the meatloaf is going to be baked.
- Spray a 13" x 9" glass baking dish with cooking spray.
- Mix all the ingredients with clean hands. Don't over mix.
- Form meatloaf in center of pan, to desired thickness.
- Cover with aluminum foil and bake 50 minutes (check with instant read thermometer - should be 165°F).
- While meatloaf is baking - prepare the ketchup topping -Mix 3/4 cup of ketchup and 3 T. of brown sugar, breaking up any lumps and add a pinch of black pepper.
- Remove the foil and add the ketchup topping, return to oven, uncovered and bake another 10-15 minutes.
- Remove from oven and allow to rest for 10 minutes before slicing.
I have changed my mom's recipe slightly she would usually use instant oats, where I use the couscous (uncooked). Always reminds me of Ma...Enjoy
serve with oven roasted potatoes and coleslaw for a truly great birthday dinner.
