Instructions
Lemon-Limeade Mixture
- Zest two lemons and two limes and reserve the zest. Roll all of the lemons and limes to loosen the juice, juice them into a pitcher. Meanwhile in a pan add the water, sugar and bring to a boil to create a simple syrup. Syrup is ready when all of the sugar has dissolved. Add the mint leaves and allow them to steep in simple syrup for 5 minutes, you can leave the mint, remove or not use the mint at all. Add the simple syrup and the zest and adjust - if too sweet add more lemon/lime juice. Reserve in refrigerator.
Melon Preparation
- Melons should be refrigerated the night or a couple days before assembling the drink. Remove the chilled watermelons from the refrigerator and cut a hole in the top of each large enough to insert an immersion blender (if you have) or use a hand held mixer with one of the beaters removed. Blend the melon as much as possible creating a thick juice. Pour the juice/melon from the melon into a large bowl. Remove as much of the melon as possible.
Melon Assembly
- Mix together the lemon-limeade and watermelon juice in pitcher. Return the mixture to the melon(s). Garnish with mint leaves add large straws and enjoy!
