Ingredients
For Potatoes
- 6 large sweet potatoes
- 2 large eggs beaten
- 1/4 cup orange juice
- 1 T. orange zest
- 4 T. light brown sugar packed
- 2 T. melted unsalted butter
- 1/2 t. sea salt
- 1 t. vanilla extract
For the Topping
- 4 T. unsalted butter softened
- 1/4 cup dark brown sugar packed
- 1/4 cup light brown sugar packed
- 1 cup pecans chopped

For the Potatoes
- Preheat oven to 375°F. Place sweet potatoes on a baking sheet and roast until very tender, about 1 hour and 30 minutes (check with a fork) Allow to cool slightly. Reduce oven temperature to 350°F. Remove skins and place in a mixing bowl - mix until smooth. Add the orange juice, vanilla extract, brown sugar, butter and eggs. Mix until everything is well incorporated. Transfer to a buttered 8 inch square backing dish.
For the topping
- Mix all of the topping ingredients in a bowl. Sprinkle over the potatoes and bake until nuts are browned and casserole is puffed.
