Sausage and Peppers

Ingredients
- 2 T. olive oil extra-virgin
- 2 T. unsalted butter
- 1.5 lbs. Italian Sausage Sweet, Mild or Hot - whatever you like
- 4 peppers green, red, orange and yellow cut into 1" pieces
- 1 large sweet onion quartered into eigths
- 4 cloves fresh chopped garlic
- 1 t. sea salt
- 1 t. freshly ground black pepper
- 1 T. dried Italian seasoning
- 1 lb. penne cooked and drained
- 1 jar marinara sauce I used Pego Sausage and Garlic
- 1/2 cup grated parmesean cheese

Instructions
- Cook penne pasta according to package instructions, drain.
- Heat a large skillet on medium high heat. Add olive oil and butter.
- Remove casings from sausage and chuck up into 1" pieces and add to heated skillet
- Remove the sausage when it is browned, and drain on paper towels - doesn't have to be completely cooked, it will cook when added back to peppers and onions.
- Add peppers and onions to skillet and more oil/butter if needed.
- cook peppers and onions for 5-7 minutes until they start to become soft. Add chopped garlic and continue to stir so garlic doesn't burn.
- Add sausage back to skillet and add the marinara sauce along with 3/4 cup of water (add to jar and swirl to get all the sauce out).
- Cover tightly with lid and allow to cook until done about 7 minutes more.
- Add cooked penne to skillet - stir to incorporate and add the grated parmesean cheese to top. Cover with lid until ready to serve keeping the stove on low.

Serve with garlic knots and a salad.
