Rice Pudding

Nothing says comfort like rice pudding for me... creamy and covered in ground cinnamon. I often go to Berry's Restaurant in Norwalk, Ohio, just for their rice pudding - I love it! Lately though I have discovered a commercial brand, El Viajero, that I've found at Wal-Mart that is simply the best store bought brand there is available.

Ingredients
- 1/3 cup Mahatma basmati rice - uncooked
- 1/2 cup granulated sugar
- 2 cups whole milk - scalded see instructions on scalding
- 2 cups half and half
- 1 t. vanilla

Instructions
- Preheat oven to 300°F. Scald milk in a pan over medium heat - when bubbles form around the sides and it begins to steam it is scalded - do not scorch! Put everything into a 1 1/2 quart baking dish and combine. Bake for 2 1/2 hours stirring every 15 minutes for a creamy consistency. Once cooked remove from oven and cool. Before serving completely cover the top in ground cinnamon. Serve in bowls with a dollop of whipped cream.
