Ingredients
French Fries / Curds
- 1 bag favorite French Fries or better yet make your own!
- 12 ounces Wisconsin cheese curds
Poutine Sauce
- 2 T. cornstarch
- 2 T. water
- 1/4 cup all-purpose flour
- 6 T. unsalted butter
- 2 cloves chopped fresh garlic
- 2 10 oz. cans beef broth
- 1 10 oz. can chicken broth

French Fries
- Prepare French Fries - I prefer deep fried fries for poutine, they are much more crispier than oven baked.
Poutine Sauce
- In a bowl dissolve the cornstarch in the water.
- In a saucepan over medium high heat melt the butter, add the flour and cook for about 5 minutes stirring until flour/butter turns a golden brown. Add the chopped garlic and cook for another 40 seconds - do not burn the garlic.
- Add all the broths and bring to a boil, whisking to incorporate. Stir in cornstarch slurry and simmer 5 minutes until the sauce thickens. Season to taste with salt and pepper.
Pouline Assembly
- Place fries (hot) in a bowl, or whatever serving vessel you choose. Add 1/2 cup of cheese curds to each serving and ladle hot sauce over all.
