- 1 envelope + 2 t. unflavored gelatin
- 1 cup cold water
- 1 cup granulated sugar
- 2 1/4 cups powdered sugar
- 1 1/2 t. vanilla
- 1 t. baking soda
- 1/8 t. salt

- In a 2-quart saucepan, sprinkle the gelatin on cold water to soften; stir in 1 cup of granulated sugar. Over medium high heat, bring to a rolling boil, reduce heat and simmer uncovered for 10 minutes. In a large mixing (a stand mixer would be best) bowl add the powdered sugar and hot gelatin mixture. Beat on medium speed about two minutes until foamy. Add vanilla, baking powder and slat and then beat on highest speed for 12-15 minutes or until soft peaks form. Frost the cookies with frosting and allow to stand until frosting is dry about 2 1/2 hours, store gently and indulge with a cup of coffee or a tall glass of milk!
